Ellen Swallow Richards, the founder of home economics in the late 1800s thought kitchens on a large-scale would be a lot more efficient than each household having its own individual kitchen. It would have been more social, too…. I can see your point about poor quality in mass preparation of food when profit is more important than nutritional value and taste.
